Paleo Candy Sour Gummies

  • Yields: 6 (2-gummy) servings

    Total Time: 30 Minutes ( Plus 2 hours to chill)

    • 2 & 1/2 cup unsweetened frozen fruit ( ex: strawberries, peaches or mangoes)
    • Juice of 1 lemon plus water to measure 2/3 cup liquid
    • Pinch of salt
    • 4 TBSP unflavored geltin Powder
    • 2 to 3 TBSP honey or Sugar*

    * If your child is under 1 year old, subsitute the honey with sugar

  • Directions
    1. Mix gelatin into the lemon juice and water and allow to hydrate for 3 to 5 minutes.
    2. Put fruit into a medium-size saucepan and stir in the gelatin miture and salt. Stir over medium heat until the mixture just begins to simmer and the gealtin has melted, about ten minutes.
    3. Turn off the heat and allow to cool for about 15 minutes.
    4. Stir in Honey or sugar until dissolved.
    5. Pour the warm mixture into a blender and pulse until jsut smooth, about 30 seconds toal. Avoid overblending, as this creates excessive  air bubbles.
    6. Transfer the  mixture into ligtly oiled silicone ice cube molds or a glass baking dish.
    7. Refrigerate 2 hours before removing from the molds or cutting into squares. These will keep in the refridgerator for up to 1 week.
